Simmer 1/2 C brining spices & 1/4 C brown sugar in 6 C water. When salt/sugar has dissolved, cool to room temp. Submerge 3 lbs. poultry & soak in fridge for 1 hour per lb. Rinse very well, pat dry & cook until desired doneness.
