Tapas: The general name for small dishes of food that are served to be shared in Spain is Tapas. They can vary from a bowl of olives to a plate of grilled prawns. In this three part series we will recreate some of the most popular Tapas from 3 regions of Spain: Sevilla, Barcelona and Madrid.
Madrid - A city close to my heart, full of culture and beauty offers some of the most flavorful and memorable Tapas. This third and final of the 3-part Tapas series we focus on fish, fried and fritters.
Bacalao (Salt Cod) Breaded and fried or stewed in tomato sauce.
Croquetas (Croquettes) are often made with ham, béchamel sauce, breaded and deep fried.
Tortilla Española (Spanish Omelette) This dish is often eaten sliced or sandwiched between two slices of a baguette type bread and Spanish mayonnaise… One of my absolute favorites when I lived in Spain.
Gambas Ajillo (Garlic Shrimp) Simple. Olive oil, garlic and chili flakes. Done.
Churros con Chocolate (Cinnamon Fritter with Chocolate Sauce)
